Opening their seventh eastern Kentucky Subway store in Evarts, owners Jighnesh and P.J. Patel, of Pikeville, said they are excited to be serving the people of Harlan County with a newly designed Subway restaurant.
“This is a new design for Subway — state-of-the-art,” said Carlie Hoskins, business consultant for Subway Development of Kentucky. “We’re very excited about this new design and we think we’ll do well here in Evarts. We’re glad to be in the community.”
The Patels said after Evarts Mayor Eddie Manning contacted the Subway home office for Kentucky requesting a Subway be built in his city, they heard about the request in a newsletter sent out by the company.
“We decided to come to Evarts and look around. After our visit, we decided we wanted to open a Subway here,” the Patels said. “We really love the area. The people here have been so helpful and welcoming to us. There is the Black Mountain Thunder Zip Line here in the Evarts area and all kinds of other outdoor tourism in the county. We thought Evarts would be an ideal place to open a Subway. It’s much needed in the area.”
Seating 45-50 people, the restaurant serves breakfast with options that include a variety of sandwiches and melts, with the choice of egg whites or whole eggs, veggies, toppings and sauces.
Serving sandwiches any time during the day, and ranking at the top of the favorites list are the Italian B.M.T, Tuna and the Subway Club sandwiches. Fresh toasted sandwich favorites include Meatball Marinara, the Chicken & Bacon Ranch and their Subway Melt subs.
“Breads used at Subway are baked fresh daily, with the exception of the flatbread, and are a good source of calcium and Vitamin D,” the Patels said. “All sandwiches are available in 6-inch and footlong sizes.”
Other choices on the menu include kid’s meals, salads, pizza, cookies, packaged apple slices, chips, soft drinks, juice, coffee, water and tea. The restaurant also offers sandwich platters and giant subs for parties, meetings and other special events.
Located next to the Family Dollar Store on KY 38 in downtown Evarts, store manager Harsh Pikiwalla said the restaurant is open Monday through Friday from 7 a.m. to 9:30 p.m., Saturdays 8 a.m. to 9 p.m. and Sundays 9 a.m. to 9 p.m.
